Caramel has been delighting palates for centuries, its origins tracing back to early Arab confectioners who first discovered the magic of heating sugar into a rich, golden syrup. By the 17th century, European pastry makers—especially in France—were refining caramel into sauces, candies, and the early butter- and cream-based versions we recognize today. The International Chocolate Salon Awards for the 2025 CHOCOLATE BAR AWARDS are based on the combined total number of votes received by each entrant from the Judging Panel.
The Judging Panel consists of National and Regional Magazines, Newspaper and Blog Editors, plus Topic Experts, Local Chefs and Food Gurus.
